A MAN who murdered his estranged wife's date, who she had just met on Tinder, has been sentenced to at least 30 years jail.

Justice Robert Beech-Jones said former nurse Alexander Villaluna, 46, was a "textbook case of a perpetrator of extreme domestic violence" who had formed the belief he would "kill any man that he thought showed a romantic interest in his ex-partner".

Villaluna showed no reaction in the NSW Supreme Court when he was sentenced to 40 years with a non-parole period of 30 years for the murder of Keith Collins, 54, and the grievous bodily harm of his estranged wife Jovi Pilapil, 40.

He had previously pleaded guilty to the stabbing murder and attack on his ex-wife at the Kangam BBQ restaurant at Hornsby on March 30 last year.

Agreed facts stated Villaluna walked into the nearly empty restaurant, approached Mr Collins from behind, put his arm around his shoulder and said "what are you doing with my wife?"

Graphic CCTV footage played in court showed Mr Collins stand up and then Villaluna stab him in the neck and repeatedly in the side causing him to collapse on the floor.

Villaluna then set upon Ms Pilapil stabbing her under her left breast and right arm, which she had lifted to defend herself.

After that he turned back to Mr Collins, knelt on his prone body and stabbed him repeatedly in the chest.

He then walked calmly from the restaurant.

Witnesses described how Villaluna "seemed perfectly calm" as, "completely covered in blood," he sat on the edge of a fountain in an outdoor plaza and called Ms Pilapil's daughter telling her that he had seen her mother on a date.

"I think I killed the guy. I stabbed your mum," he said.

Mr Collins, of Terrigal, had four children and three stepchildren.

He had started a packaging business, Elite Packaging Solutions, in his garage in 2009 and by the time of his death it employed 30 people.
